Why does gingerbread taste better as time goes by?
Gingerbread is a baked treat which matures over time, becoming fuller, more aromatic, deeper in flavour with each passing day. The secret lies in the spices, which over time create a harmony with the other ingredients to create the perfect composition.
In the past, gingerbread was made a long time before Christmas. The dough was placed in cold pantries for weeks, such that it reached the perfect softness, aroma and flavour by the Christmas Eve. It was a tradition which required patience but rewarded it with exceptional results.
At Tago, we make sure that our gingerbread is fresh, but still full of the same flavourful harmony that turns every bite into pure pleasure.
